At ICHIRAN we don’t diversify our menu, but concentrate only on Tonkotsu Ramen.
Ramen is offered in a wide range of types, from those based on soy sauce, salt, or miso paste, as well as varying broths like seafood-based broths or meat-based broths. The safety and satisfaction of our customers is our priority. That is why we only use the highest-in-quality products for the creation of our ramen. Our professionals are masters of the complicated techniques involved in ramen making, and they always pursue a higher level of exquisiteness for our customers.

ICHIRAN's special raw noodles are made from a unique blend of quality flours, with the foremost consideration being synergy with our soup.
Additionally, our original aged "Spicy Red Sauce" is a chili-powder based blend of 30 different ingredients that is added to our ramen to bring out a more rich taste.
ICHIRAN was the creator and the first to place spicy red sauce directly in the center of its ramen. We mix 30 kinds of ingredients with our own blended peppers as a base, and we age it for many days and nights. This allows for creating a wide flavor profile that is about more than just spiciness, making the ramen even richer in flavor.
A key part of ramen's taste is "dashi". Only four people working at ICHIRAN know the recipe.To protect this unique and secret recipe, the dashi is produced within a stringent system.
When we provide dashi to our customers at our shops, the moisture and drops of water that accumulate on the lid of the dashi pot is returned to the dashi so that it's perfect quality is continuously maintained.
Through many long years of work and research by our ramen experts, we have achieved a secret pork bone broth the delicious flavor of which has been fully brought to the fore.
Our experienced artisans specially blend wheat flour to produce noodles tailored to the climate, temperature, humidity, and other conditions of the day.
Every last detail -- even the protein content of the wheat -- is scrupulously checked, with the temperature of the water used being tweaked by the season.
The resulting noodles are then stored in special boxes to ensure they are not exposed to air until right before they go in the pot. Even during busy times, the shop only takes strictly limited quantities of noodles out to room temperature.
Furthermore, the temperature of the boiling pot is always maintained at a consistent level through the use of proprietary sensors. When hot water is added to the pot, it is carefully controlled in quantities of 110-150cc every ten seconds, ensuring that the water in the pot remains clean and stable.
Because noodles are delicate, we rinse them five times after they come out of the pot. Noodles rinsed more than this lose their flavor, something we would never want to subject our patrons to.
Our fresh noodles are time sensitive. Once in the boiling water they expand. Therefore, we strive to deliver your ramen from kitchen to your table within a fifteen second window so you can enjoy exactly the texture you ordered. We have a rule about how long it takes for our noodles to reach a guest’s table. Anything over that limit is unacceptable, which is why all seats are within arm’s length. The time? 15 seconds.
ICHIRAN is the first ramen shop to offer 0% trans fat ramen. Trans fats are largely articifial fats that can contribute to heart diseases and high cholesterol. We take our health seriously and use only 100% clean pork fat to offer you a good source of your daily fat intake.
One of the components of delivering the greatest ramen is our unique bowls made in the acclaimed Arita Region of Japan. Each bowl is individually handcrafted and designed to complete ICHIRAN's full dining set. Out of thanks for your savoring our ramen to the last drop, you will find a message at the bottom of the bowl, reading, “This last drop is the pinnacle of joy.”
We craft each bowl of ramen one at a time, serving them at their best moment. Dig in right away -- there is no need to wait for your companions.
First sample the broth and noodles on their own for about three or four bites, not mixing the secret sauce in just yet. We recommend only then blending the sauce in. Thoroughly mixing Ichiran’s special noodles with our natural pork broth soup creates a wonderful harmony of flavors.
Why not try a “noodle refill,” a unique aspect of Hakata’s culture?
First mix the noodle refill and small quantity of broth it comes with, sampling them before transferring to your bowl. With each bite, the gently sweet taste and aroma of the noodles will unfurl across the palate. The noodles can then be dipped in the remaining broth for further enjoyment.
Incidentally, ordering a noodle refill after eating half of your noodles will ensure that your new noodles are ready just as you finish your first serving.
Adding extra toppings to taste will let you create a custom bowl that is even truer to your preferences.
