We wanted to support expectant exam students who visit Dazaifu Tenman-gu Shrine to pray to Sugawara no Michizane, considered the deity of scholarship, so we created this special dish.
Fully free of off-flavors and particularities, our Natural Pork Broth Ramen is all about bringing out the flavor of the pork.
The noodles are crafted to balance perfectly with the broth and are made from a special blend of wheat flour. They are two times longer than the norm (59cm, or a play on words in Japanese for “success”), and are meant as a wish for loooong years of good luck.
Furthermore, we blend a special mix of thirty seasonings, among them chili peppers, to create our Hiden no Tare that enhances the flavor.

Being able to eat fresh, beautifully-cooked strands of noodles is a sign of good, healthy life for a long future to come. Longer the noodles, longer the life. “Gokaku” noodles are not shy of this concept, with individual strands of noodles that are 59cm long, more than twice the normal length. Through many long years of work and research by our ramen experts, we have achieved a secret pork bone broth the delicious flavor of which has been fully brought to the fore. Our pork-based broth is constantly monitored, simmered and skimmed to offer our customers the most authentic and flavorful tonkotsu broth without the strong aroma usually associated with it.
We mix 30 kinds of ingredients with our own blended peppers as a base, and we age it for many days and nights. ICHIRAN was the first to place spicy res sauce directly in the center of its ramen.
Classic Tonkotsu ramen served in a custom-made bowl with a spirit-filled purpose. The traditional ume flowers and wishful notes that reads, "Pass" are designed to simply mean prayers of hope for you to pass at your next exam or succeed in what you are seeking currently. Shape and design of bowl represent symbols of “passing”, success, and happiness. When eaten, soup is supposed to slide in smoothly when drank from one of the edges, a metaphor for a smooth passing.Our Success Bowl is all about giving you the vim and vigor you need to succeed.
