Master noodle craftsmen use the best techniques learned from years of practice and research to make the finest noodles with a smooth texture.
Our fresh noodles are very time sensitive. Once in the boiling water, they expand. Therefore, we strive to deliver your ramen from kitchen to your table within a fifteen second window so that you can enjoy the exact texture you ordered. We have a rule about how long it takes for our noodles to reach a guest’s table. Anything over that limit is unacceptable, which is why all seats are within arm’s length. The time? 15 seconds.
Through many long years of work and research by our ramen experts, we have achieved a secret pork bone broth the delicious flavor of which has been fully brought to the fore. Our pork-based broth is constantly monitored, simmered and skimmed to offer our customers the most authentic and flavorful tonkotsu broth without the strong aroma usually associated with it.
We mix 30 kinds of ingredients with our own blended peppers as a base, and we age it for many days and nights. ICHIRAN was the creator and the first to place spicy red sauce directly in the center of its ramen.
The new thicker, juicier pork slices are a good match with our broth. The true flavors of the pork slowly reveals itself as you continue to chew. Our chashu artisans are specialists in meat. From the way the pork is cut to the seasonings, they make each and every slice a perfect balance of flavor and texture.
