Ra-mugi Noodles
“Ramugi-men” refers to noodles (“men”) made from Fukuoka-grown wheat cultivated especially for ramen (“ramugi”).
These noodles are made from wheat grown in Fukuoka Prefecture with the love and patience of local farmers, for the purpose of creating ramen noodles.
What sets Ichiran’s ramugi-men apart is that they’re made only with ramugi flour, blending in no other wheat flours.
Amid the struggle by shops everywhere to create thin noodles using 100% ramugi flour, our specialized artisans’ long years of noodle-crafting experience came together with innovative technology to perfect a straight, extra-thin noodle that matches tonkotsu (pork bone) broth to a T.
With a full-bodied texture that goes down smooth, these are noodles you won’t find anywhere except a shop specializing in all-natural tonkotsu ramen.
