麺は、自然豊かな福岡県糸島産のラーメン専用小麦"ラー麦"を100%使用した、その名も『糸島産ラー麦100%麺』。全粒粉を使用し風味豊かに仕上げております。
『糸島一蘭の森 手巻き焼豚』は厳選した上質な豚バラ肉を丁寧に巻き、真空調理でじっくりと味を染み込ませております。巻くことで凝縮された旨味が口の中に広がります。

Our new Dashi is the heart of our Wafuu Tonkotsu Ramen. We developed the recipe while researching ways of refining our ramen's flavors. As they relentlessly search for the ultimate ramen recipe, our craftsmen also study various culinary techniques. This include methods used to make Dashi.
These Japanese cooking techniques extract the delicate flavors of the individual ingredients and combine them to create a robust flavor profile. The Dashi we created with these techniques has a subtle flavor that enhances the taste of our broth. It also highlights the hidden flavors of the ingredients in our ramen. With such an elegant flavor, we hope you will find every drop of our new Wafuu Tonkotsu Ramen to be as enjoyable as the first.
We use 100% Ra-mugi flour for our noodles.
Ra-mugi is a special type of wheat designed for making ramen noodles. This unique wheat species is grown locally in our hometown of Fukuoka. We provided our full support in its development as a way to give back to and show our hometown how much we appreciate its love of our ramen. The Ra-mugi wheat fields sit at the foot of Mt. Kaya in the lush town of Itoshima. The strong winds blowing down from the mountain strengthen the wheat and the fertile soil from a land surrounded by mountains and the sea provides it with an abundance of nutrients. ICHIRAN no Mori, located near these golden wheat fields, serves ramen with noodles made from whole Ra-mugi wheat flour.
We want to retain as much of the Ra-mugi's nutrients as possible, so we developed techniques to make our noodles in house. We hope you will enjoy a rare taste of the mellow Ra-mugi wheat flavor in our smooth and chewy Ra-mugi noodles.

Ceramic craftsmen in Arita carefully hand-make each and every one of GINZA ICHIRAN’s jubako donburi bowls. Our ramen is served in these traditional jubako donburi bowls as a reminder to our guests to enjoy their own “special bowl” of ramen.
