Aromatic steam rises out of the Jubako bowl as you open the lid, arousing your appetite. You can taste the rich, sophisticated flavors the combination of our Original Spicy Red Sauce, an aged chili sauce made with a blend of 30 ingredients, and our creamy tonkotsu soup makes. It is a soup without the strong aroma of pork - a broth we have been perfecting ever since we first opened our doors.
Made only for GINZA ICHIRAN, the new chashu and noodles are added to the bowl to create a brand new flavor for our ramen. It is a taste that is sure to satisfy even the most discerning of ICHIRAN fans.
GINZA ICHIRAN’s Daiginjo Noodles differ from all other ICHIRAN noodles in two very important ways. Not only is the recipe a very special flour blend, but great attention is also given to the quality of the flour. The flour in our Daiginjo Noodles are finely polished grains. Polishing flour so carefully removes most of the impurities, creating flavorful noodles. We only use flour that has been polished down to its delicious core for our Daiginjo Noodles. When cooked, the noodles have a crystal-like, clear brilliance and gentle softness in texture. Made with vitamin-rich sake kasu (sake lees), our Daiginjo Noodles also have health benefits that help with diabetes, high blood pressure, and can also improve the skin. The trademark fruity aroma of the highest quality junmai daiginjo sake kasu can be tasted in our Daiginjo Noodles.
ICHIRAN was the first to add a spicy red sauce directly onto ramen.
We make our special chili sauce by blending together 30 different spices and ingredients and aging it over days and nights. This allows the sauce to develop a richer, more complex flavor that enhances our ramen.
Dashi is the backbone of all ramen.
Only 4 people in the company know our secret dashi recipe. To protect this recipe, we make our dashi in under a strictly controlled system.
Dashi is such a key ingredient that even a slight change in the water content due to evaporation will change the flavor of the ramen. To prevent this, we take extreme care with our dashi so that the last bowl we make tastes just as good as the first.
Our creamy soup is made using a technique developed by our craftsmen through years of research to draw out the robust flavors of the pork bone broth.

A pork belly carefully wrapped with high-quality pork belly carefully selected by Ichiran craftsmen and simmered in a special sauce. By wrapping, the umami is condensed tightly and spreads when you put it in your mouth. Although it is thick, its body is soft enough to melt, and you should be able to feel the sweetness of fat. By adding the deliciousness of this char siu, harmony with the Soup is born, and the taste becomes even deeper. It is a gem that will surely satisfy those who know the taste of Ichiran.
* ICHIRAN no Mori hand-rolled pork is all hand-rolled, but depending on the part, it may come loose at the time of provision. Please note that the taste and quality will not be affected.
