ICHIRAN's menu is focused only on tonkotsu ramen.
Ramen is available in various types such as shoyu, salt, and miso ramen. There are also an endless variety of soup bases from chicken to seafood. Our craftsmen have the skills to make all kinds of ramen soup, but we focus our efforts into making the perfect bowl of tonkotsu ramen. A team of over 40 craftsmen devote their passion to continuously study tonkotsu ramen day and night.

Our natural pork-bone soup is skimmed to perfection so that the ultimate flavor of pork is drawn out.
ICHIRAN's special raw noodles are made from a unique blend of quality flours, with the foremost consideration being synergy with our soup.
Additionally, our original aged "Original Spicy Red Sauce" is a chili-powder based blend of 30 different ingredients that is added to our ramen to bring out a more rich taste.
ICHIRAN was the first to add a spicy red sauce directly onto ramen. We make our special chili sauce by blending together 30 different spices and ingredients and aging it over days and nights. This allows the sauce to develop a richer, more complex flavor that enhances our ramen.
Dashi is the backbone of all ramen.
Only 4 people in the company know our secret dashi recipe. To protect this recipe, we make our dashi in under a strictly controlled system.
Dashi is such a key ingredient that even a slight change in the water content due to evaporation will change the flavor of the ramen. To prevent this, we take extreme care with our dashi so that the last bowl we make tastes just as good as the first.
Our creamy soup is made using a technique developed by our craftsmen through years of research to draw out the robust flavors of the pork bone broth.
Our unique process is applied in the 2 stages of production and cooking to completely remove any impurities, leaving only a delicious tonkotsu broth without the unique smell peculiar to tonkotsu.

Since fresh noodles are very delicate, we make sure that our noodles are handled with extreme care.
The finished products are stored in special boxes so they are not exposed to air until they go into the noodle boiler. Even when our restaurants are at their busiest, we limit the quantity of noodles that we take out of the special boxes to sit at room temperature.
The temperature of the noodle boiler is always maintained at a consistent level with the use of special sensors.
We also carefully control the quantity of hot water added to the boiler (i.e. only 110-150 cc every ten seconds) to ensure that the water in the boiler stays clean.
Because our noodles are very delicate, we drain the noodles using a noodle shaker, shaking it exactly 3 times - never more or less. We will never serve noodles that do not meet our standards to our guests.
Noodles are made with a focus on taste, flavor, and texture, and are delicate "super raw Noodles", so the state changes every moment after being added to Soup. At Ichiran, we do not have seats that take more than 15 seconds (28.8m) from the time Ramen is made to the time it is served so that you can enjoy it in the most delicious state. That is the 15 second rule.
ICHIRAN is the first ramen restaurant in the industry to use 100% naturally derived fats. Trans fats are mostly artificial fats and believed to be the cause for LDL cholesterol to rise in the body. We take your health seriously so we provide you with a good source for your daily fat intake. ICHIRAN is first in the world to offer 0% trans fat ramen.
We use the purest filtered water in everything we do. From preparing the soup and noodles to cooking the rice, and even drinking water and water used to cook noodles in our kitchens. We call this water the “springs of noodle vitality.” These “springs” bring out the natural flavor of the ingredients used in the noodles, impart them with a nice toothy texture, and ensure that they will not go limp in the hot broth. This water is absolutely essential to making a delicious bowl of ramen. Furthermore, it absorbs well in the body and will not put strain on the stomach, making it perfect as drinking water, too. We make no compromises when it comes to providing you with food that is safe and with peace of mind.Our water brings out the natural flavor of the ingredients, give our noodles a chewy texture and even helps the noodles maintain their texture in the hot broth. We craft each bowl of ramen one at a time, serving them at their best moment. Dig in right away -- there is no need to wait for your companions.
First sample the broth and noodles on their own for about three or four bites, not mixing the secret sauce in just yet. We recommend only then blending the sauce in. Thoroughly mixing Ichiran’s special noodles with our natural pork broth soup creates a wonderful harmony of flavors.
Why not try a “noodle refill,” a unique aspect of Hakata’s culture?
First mix the noodle refill and small quantity of broth it comes with, sampling them before transferring to your bowl.
With each bite, the gently sweet taste and aroma of the noodles will unfurl across the palate. The noodles can then be dipped in the remaining broth for further enjoyment.
Incidentally, ordering a noodle refill after eating half of your noodles will ensure that your new noodles are ready just as you finish your first serving.
Adding extra toppings to taste will let you create a custom bowl that is even truer to your preferences.
