ICHIRAN is dedicated solely to the pursuit of the perfect tonkotsu ramen. We devote days and nights to refining our signature dish. Our beloved tonkotsu broth is made with 100% pork bones. To remove the signature pungent odor found in pork broths, we developed special techniques to draw out the rich tonkotsu flavors while eliminating the impurities. This creates a silky broth with a rich umami flavor. We will never stop researching the best methods for creating an even better tasting ramen. 

Not only do we prioritize flavor above all else, but we also give enormous emphasis to the dining experience. One of ICHIRAN’s distinctive features is the Ramen Focus Booth. This booth blocks out distractions so our guests can truly savor their ramen. With dividers separating each seat, our design gained international attention during the COVID-19 pandemic for its effectiveness in preventing infections. Since the Ramen Focus Booth invites guests to concentrate on their meal in privacy, there is no need to interact with other guests or restaurant staff. This intimate design has made it immensely popular among celebrities and public figures.

The privacy of our booths also helps calm the body’s nervous system. Our nervous system is divided into the sympathetic and parasympathetic nervous systems. The sympathetic nervous system controls the body’s “fight or flight” response. When this system is activated during times of stress, it is hard to savor the flavors of anything we eat. But when the parasympathetic nervous system is activated, our body’s “rest and digest” functions improves our ability to distinguish subtle flavors. Sitting in our Ramen Focus Booth, the lack of distractions allows our guests to forget the hustle and bustle and relax into the “rest and digest” state. This enables them to enjoy the flavors of the ramen even more.
